Zucchini Almond Muffins

Starch free Flour free, yes way!

3 cups grated zucchini
3 eggs, beaten
2 cups almond nut flour
1 cup almond nut meal
1/3 cup melted butter
1/2 cup honey
2 teaspons cinnamon
1/4 teaspoon alspice
1 teaspoon baking soda
1/2 teaspoon salt

Mix almond flour, meal, butter, honeyu, and zucchini. Add beaten eggs, cinnamon, alspice, salt and baking soda. Mix well. Bake in muffin tins at 350 degrees. I don't use paper cups but you can. Bake for apx 20 minutes or until done. Makes 12 muffins. Take your time, this is different then your usual muffin, there is no flower. usually when the top starts to brown it's ready. This is great with honey butter!

Grated zucchini blends well with the muffin seasoned with cinnamon.
